Cheap Healthy Recipes

Sausages with potato wedges and sauteed vegetables

Ingredients:

  • 8 Butchers selection Pork sausages
  • 4 Baking Potatoes
  • 2 tbsp Olive Oil
  • Freshly ground salt and black pepper
  • 1 tsp minced fresh garlic
  • 150g pack of mangetout
  • 250g pack of vine tomatoes

Preheat  the oven to 220˚C (Gas Mark 7). Grease a baking sheet.

Cut each potato into 12 wedges, place in a large bowl. Toss the potatoes with olive oil, garlic, salt and pepper. Bake in the oven for 20 minutes.

Grill the sausages in the oven according to packet instructions.

Heat the olive oil in a wok or frying pan and add the garlic. Cook over a medium heat for 30 seconds. Add the mangetout and cook for a couple of minutes.  Stir in the tomatoes and cook and continue cooking till they start to soften.

Season to taste. Serve the sausages accompanied by the potato wedges and sauteed vegetables.

Vegetable Burritos

Ingredients:

  • 8 Tortilla Wraps
  • 400g tin red Kidney beans
  • 400g tin Chickpeas
  • 400g tin chopped tomatoes
  • 200g soft garlic and herb cheese
  • 1 Red onion, peeled and finely diced
  • 2 peppers, finely chopped
  • 1 courgette, finely chopped
  • 1 tsp Chilli powder
  • 1 tsp Dried Basil
  • 15ml Lemon juice
  • 1 tbsp tomato puree
  • 80g Grated cheddar cheese
  • Black pepper 
  • 1 tbsp olive oil

Preheat the oven to 200°C (Gas Mark 6).

In a large Wok or frying pan, heat the oil, add the chopped peppers, onion, and courgette, saute for about 5 minutes.

Drain the red kidney beans and chickpeas, add to the vegetables along with the chilli and basil, season with black pepper and cook for another five minutes.

Sieve the chopped tomatoes, keeping the juice for sauce.

Add the sieve tomatoes and the soft cheese to the vegetable mixture and mix well.

Divide the mixture between the 8 wraps, putting the mixture into the center and folding them into a square parcel. Then put them into an ovenproof dish.


Put the sieved tomato juice into a small saucepan, add the lemon juice, stock cube, water and tomato puree, continue to stir and bring to the boil.

Pour over the wraps, sprinkle with the cheese, and bake in the oven for 20 minutes.

Chicken Caesar Salad

Ingredients:

  • 375g  pack diced (cooked)chicken breast
  • 4 large eggs
  • 100g pack chopped Italian style Pancetta
  • 2 slices thick white bread 
  • 2/3 spring onions
  • 2 tbsp olive oil
  • 400g Romaine or Iceberg lettuce 
  • 190 ml Classic Caesar dressing
  • 60g Parmigiano Reggiano 
  • Black Pepper

Hard boil the eggs for 10 minutes, cool under some cold water, peel and cut into quarters.

Cut the bread into small cubes. Add the oil to a large frying pan or wok. Heat through before adding the bread cubes and the pancetta. Allow to fry, meanwhile stirring until both the bread and pancetta turn golden and crisp.

Shred the lettuce, trim the onions and slice into rings.

Toss the dressing with the chicken in a large serving bowl, add the shredded lettuce and spring onions, then mix well.

Gently mix the eggs, croutons, and pancetta. Grate the cheese over the salad and grind in some black pepper.

This Recipe is great served alongside some Ciabatta bread with some olive oil and balsamic vinegar.
